Samples are taken before harvesting to establish the ripeness levels of the grapes, which are later hand picked. Fermentation and vinification are carried out separately for each vineyard and later the wines are blended, choosing the vats that are best suited to the character and elegance of Soave wine. Vinifcation is followed with modern technologies respecting the criteria for organic production. This involves: destemming, light pressing, musts cleaning by natural decanting, fltration with fossil dust, fermentation at controlled temperatures and fining using bentonite.
