When making the Buenas Ondas red wines, 30% of the wine is treated with French oak staves, middle toast, during fermentation. Another 30% is treated with micro-oxygenation for 40 days. Then all of the wine undergoes maloactic fermentation and is fined with bentonite. This Cab has a spicy, peppery flavor combined with distinct mint and eucalyptus notes. It has soft tannins and a long finish.
