100% Pinot Noir

Grapes bunches were thinned and hand harvested to maximize flavors and fruit quality.
The fruit was crushed and de-stemmed and transferred to open fermenters. After a period of cold maceration for 4 days the juice was inoculated for fermentation. Regular hand plunging over 10 days was carried out in the winery. The fermenting juice was then transferred into a mixture of oak barriques and tank for maturation and to wait for secondary fermentation in the spring before bottling in the new year.

Dark cherry, chocolate, raspberry and herbal aromas with hints of savoury, chary oak. Red cherry and dark berry flavors with some earthy forest floor and spicy notes. A well structured, fruity Pinot Noir with a lovely lingering finish. Enjoy with salmon, roast poultry or red meats.
